Pork Centric Restaurant to Open on Madison's East Side

Wisconsinites apparently love their meat as much as they love their cheese.  A new restaurant set to open on the hip near east side of Madison has a pork-centric menu.  While the restaurant's aim to focus on purchasing its menu items from small-scale, local farms is a good idea, they will certainly not have any vegans dining there.  But since this is Madison, they probably will find plenty of other people willing to go there to eat, "nose-to-tail pork (feet, belly, jowls and ears), rabbit, lamb and venison, as well as seafood (from smelt to octopus)."
